6 medium ripe tomatoes
1/2 cup minced onion
1/4 cup chopped green pepper
1/4 cup chopped celery
2 Tblsp salt
1/2 tsp pepper
1 tsp white sugar
1 Tblsp chopped parsley
1 Tblsp butter
Buttered Bread Crumbs
1. Peel, core, quarter tomatoes and place in a saucepan.
2. Add onion, green pepper, celery.
3. Sprinkle with salt, pepper, sugar, parsley.
4. Bring to a boil, cover, and simmer 10 minutes.
5. To serve: place in individual dishes (4).
6. Dot with butter and sprinkle with crumbs.
