Ingredients:

2 cups chopped rhubarb
2 cups chopped onion
1 cup vinegar
2 cups brown sugar
1/2 tsp salt
1/2 tsp allspice
1/2 tsp cinnamon
1/4 tsp pepper
1/4 tsp cloves


Combine all ingredients. Bring to a boil, reduce heat.
Cook until onions are soft. Pour into sterilized jars and seal.
Makes about 3 cups.

Tip: Use this relish as a marinade for baked or broiled ham and continue to use as a baste when meat is cooking.
